Bread - flat garlic bread

It's always nice to have something tasty to snack on before the meal arrives, just to take the edge off. And what better than some crispy, salty, garlicky bread.
For two pizza-sized flat breads use about 400g of flour (cake flour will result in a flat, almost biscuit-like bread) while self-raising flour will make your flat bread a bit lighter. Either will do.
Mix the flour with warm water until you have a homogeneous dough. Divide into two equal balls. In a lightly-greased pizza pan, place the ball in the middle and flatten out with the heel of your hand until it reaches all the sides. Add as much crushed garlic as you like (which could easily be substituted with herbs) and sprinkle semi-course salt to taste. Then add a thin layer of finely grated hard cheese (Parmesan), drizzle with olive oil and bake in the oven. Once the cheese has melted and began to colour, remove and cut immediately into finger length strips and serve.
